Baking potatoes: peeled and cut into 3 cm chunks; Salmon fillet: skin removed and finely chopped; Tinned tuna: drained well; Spring onion: finely sliced; Black pepper: freshly ground; Cooking oil: divided; Broccoli: cut into small florets.

Put the potatoes in a saucepan, cover with cold water and bring to the boil. Simmer until completely tender.

Add the peas to the potato pan for the final 3 minutes. Meanwhile, steam or boil the broccoli until tender but still bright green, then drain.

Drain the potatoes and peas thoroughly, then return them to the warm pan and mash roughly. Fold in the salmon, tuna, spring onion, lemon juice and pepper. Shape into 4 firm patties; wash hands and utensils after handling the raw salmon.
