Drain and rinse the lentils. Slice the mushrooms, dice the pepper and onion, and finely chop the garlic.
Bring a large pan of water to the boil for the pappardelle. Measure the spices and keep the spinach and lemon juice ready to finish the dish.

Heat the oil in a wide frying pan over high heat. Cook the mushrooms, stirring only occasionally, until they release their moisture and begin to brown. Add the onion and pepper and cook until softened.
