Baby potatoes: halved; Parmesan: finely grated; Red onion: finely chopped; Carrot: finely diced; Chestnut mushrooms: finely chopped; Garlic: crushed; Water: hot; Cornflour: mixed with 2 tbsp cold water; Black pepper: freshly ground.
Step by step
Put the potatoes in a saucepan, cover with cold water and add a pinch of salt. Bring to the boil and simmer until very tender.

Meanwhile, heat the oil in a large ovenproof frying pan over a high heat. Add the beef and cook, breaking it up with a spoon, until browned and no longer pink.

Add the onion, carrot, mushrooms and garlic to the beef. Cook until softened, then stir in the tomato purée, Worcestershire sauce and thyme. Add the hot water and simmer until the vegetables are tender.

Stir the cornflour mixture into the filling and cook until thickened. Drain the potatoes, mash until fairly smooth and season with pepper. Stir half the Parmesan through the mash.
