Pat the tofu dry and cut it into cubes. Slice the spring onions, keeping their green tops separate. Grate the ginger and garlic, rinse and chop the black beans, and zest and juice the lime.
In a small bowl, stir together the black beans, tamari, rice vinegar, lime zest and lime juice.
Bring a large pan of water to the boil for the spaghetti.
Step by step
Cook the spaghetti in boiling water according to the packet instructions. Add the edamame for the final 3 minutes. Reserve 150 ml cooking water, then drain both well.

Meanwhile, heat the oil in a large frying pan over medium-high heat. Fry the tofu in a single layer, turning regularly, until golden and crisp on several sides.
