Cube the sweet potato, slice the red onion, chop the garlic, grate the ginger and cut the broccoli into small florets. Keep the broccoli stalk and finely chop it so it cooks evenly.

Heat the oil in a large lidded saucepan over a medium heat. Add the red onion and a pinch of salt, then cook until softened. Stir in the garlic and ginger for the final minute.

Pour in the chopped tomatoes, coconut milk and water. Add the sweet potato, bring to a gentle simmer, cover and cook, stirring once or twice, until the sweet potato is nearly tender.
