Wash the spinach. Cut the chicken into bite-size pieces, finely chop the onion and garlic, and peel and mash the bananas with a fork.
Measure the paprika, chilli flakes if using, tomatoes, lemon juice, salt and pepper so they are ready to add.

Heat the oil in a large deep frying pan over a medium-high heat. Add the chicken in a single layer and cook, turning regularly, until lightly golden.
