Heat the oven to 220°C/200°C fan/gas 7. Prepare the peppers, chicken, onion, garlic and ginger as specified. Rinse the rice and finely grind the cashews.
Measure the spices, water and lemon juice. Open the tomatoes and chop the coriander if using.
