Get everything ready
Pat the beef dry. Slice the onion and peppers, grate the garlic and ginger, and zest and juice the lemon. Keep 1 tablespoon of lemon juice for the yoghurt sauce.
Combine the tomatoes, cucumber and coriander in a bowl. Add the remaining lemon juice, a pinch of salt and pepper, then toss gently. Set aside so the flavours mingle.
Stir the dairy-free yoghurt with the reserved lemon juice, a pinch of salt and half the lemon zest. Set aside for serving.
Mix the cumin, ground coriander, cardamom, chilli flakes, salt and black pepper in a small bowl. Toss the beef strips with half the spice mixture.
Step by step
Heat 1 tablespoon of oil in a large frying pan over a high heat. Add the beef in two batches, cooking each batch until browned and cooked through, about 2 minutes per side. Transfer to a plate.

Lower the heat to medium-high and add the remaining oil. Fry the onion and peppers with a pinch of salt for 5 minutes, stirring often, until softened with a few charred edges.

Add the garlic, ginger, remaining spice mixture and the remaining lemon zest. Stir for 30 seconds until fragrant; do not allow the garlic to catch.

Return the beef and any resting juices to the pan. Toss for 1 to 2 minutes until piping hot and evenly coated. Check that the beef has no pink centres, then season to taste.

Warm the flatbreads in a dry frying pan or microwave until pliable. Spread with lemon yoghurt, add the hot spiced beef and peppers, then spoon over the tomato-cucumber salad. Serve immediately, with any extra salad alongside.
